  • 2 tablespoons honey
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 clove garlic, minced
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Prepare the cabbage: Remove any loose or damaged outer leaves from the cabbage. Trim the very bottom of the core, but leave enough intact to hold the slices together. Stand the cabbage upright and carefully slice it into 3/4-inch thick "steaks." You should get 4-6 slices, depending on the size of the cabbage.
  3. Season the cabbage: Arrange the cabbage steaks in a single layer on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil, then sprinkle evenly with salt and black pepper.
  4. Roast the cabbage: Roast for 15-20 minutes, then flip the steaks and roast for another 10-15 minutes, or until the cabbage is tender and the edges are lightly caramelized.
  5. Prepare the glaze: While the cabbage roasts, combine balsamic vinegar, honey, soy sauce, minced garlic, and 1 teaspoon of olive oil in a small saucepan. Bring to a gentle simmer over medium heat, then reduce the heat to low and cook for 5-7 minutes, stirring occasionally, until the glaze has thickened slightly.
  6. Glaze and finish: Remove the roasted cabbage from the oven. Brush the thickened honey balsamic glaze generously over both sides of each cabbage steak. Return the glazed cabbage to the oven for an additional 5-7 minutes, allowing the glaze to caramelize and set.
  7. Serve: Transfer the glazed cabbage steaks to a serving platter. Garnish with toasted sesame seeds and fresh chopped parsley before serving warm.

Notes

Ensure cabbage slices are of similar thickness for even cooking.

Do not overcrowd the baking sheet; use two if necessary to allow for proper caramelization.
