Ingredients
- 1.5 lbs salmon fillet, skin on or off
- 1/4 cup Dijon mustard
- 1/4 cup mayonnaise
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped, plus more for garnish
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Pat the salmon fillet dry thoroughly with paper towels. Place it onto the prepared baking sheet.
- In a small bowl, whisk together the Dijon mustard, mayonnaise, fresh lemon juice, minced garlic, 2 tablespoons of the chopped parsley, salt, and black pepper until the mixture is smooth and well combined.
- Lightly brush the salmon fillet with olive oil, then evenly spread the Dijon mixture over the top surface of the salmon.
- Bake for 12-18 minutes, or until the salmon is cooked through and flakes easily with a fork. The exact cooking time will depend on the thickness of your salmon fillet.
- Remove the salmon from the oven. Garnish with additional fresh chopped parsley and serve immediately, optionally with extra lemon wedges on the side.
Notes
* For individual salmon fillets, reduce the baking time slightly, checking for doneness around 10-15 minutes.
* Ensure the salmon is fully thawed if using frozen to achieve even cooking and the best texture.
* Serve this Dijon baked salmon with roasted asparagus, steamed green beans, or a light quinoa salad for a complete meal.
* Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
