  • 1/4 cup Dijon mustard
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped, plus more for garnish
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Pat the salmon fillet dry thoroughly with paper towels. Place it onto the prepared baking sheet.
  3. In a small bowl, whisk together the Dijon mustard, mayonnaise, fresh lemon juice, minced garlic, 2 tablespoons of the chopped parsley, salt, and black pepper until the mixture is smooth and well combined.
  4. Lightly brush the salmon fillet with olive oil, then evenly spread the Dijon mixture over the top surface of the salmon.
  5. Bake for 12-18 minutes, or until the salmon is cooked through and flakes easily with a fork. The exact cooking time will depend on the thickness of your salmon fillet.
  6. Remove the salmon from the oven. Garnish with additional fresh chopped parsley and serve immediately, optionally with extra lemon wedges on the side.
