  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning blend
  • 1 ripe avocado, pitted and scooped
  • 1/4 cup fresh cilantro, packed
  • 2 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • 2 tablespoons plain Greek yogurt or mayonnaise
  • 23 tablespoons water, for desired consistency
  • Salt to taste
  • Black pepper to taste
  • Lime wedges and fresh chopped cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Pat the salmon fillets dry with paper towels. Brush each fillet with olive oil, then generously sprinkle the Cajun seasoning over all sides, pressing gently to adhere.
  3. Place the seasoned salmon fillets on the prepared baking sheet. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time may vary based on the thickness of the fillets.
  4. While the salmon bakes, prepare the avocado lime sauce. In a food processor or blender, combine the scooped avocado, fresh cilantro, lime juice, minced garlic, Greek yogurt (or mayonnaise), and 2 tablespoons of water.
  5. Blend until smooth and creamy. If the sauce is too thick, add the remaining tablespoon of water, a little at a time, until your desired consistency is reached. Season the sauce with salt and black pepper to taste.
  6. Once the salmon is baked, carefully transfer it to serving plates. Spoon a generous amount of the avocado lime sauce over each fillet.
  7. Garnish with fresh lime wedges and additional chopped cilantro before serving immediately.
