Instructions

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are acceptable. Gently fold in the finely diced apple.
  4. Heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat until it reaches 350°F (175°C). Use a deep-fry thermometer to monitor the temperature.
  5. Carefully drop spoonfuls (about 1 tablespoon each) of the batter into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes, turning occasionally, until golden brown and cooked through.
  6. Using a slotted spoon, remove the fritter bites from the oil and place them on a wire rack set over a baking sheet lined with paper towels to drain excess oil.

For a crispier exterior, ensure the fritters are fully drained of oil before glazing.

The type of apple matters; firm, slightly tart apples like Granny Smith or Honeycrisp hold their shape well and provide a nice contrast to the sweetness.
