Description

This vibrant bruschetta offers a delightful blend of sweet, tangy, and fresh flavors. Lightly toasted bread provides a crisp base, topped with a creamy layer of soft goat cheese. A colorful medley of diced ripe mango, crisp cucumber, and finely minced red onion adds a refreshing texture and a hint of piquant balance. Each bite is finished with a delicate drizzle of honey, harmonizing the ingredients into an elegant appetizer.

  • 1 baguette, sliced into 1/2-inch thick pieces
  • 2 tablespoons olive oil
  • 4 oz (113g) soft goat cheese, softened
  • 1 large ripe mango, peeled and finely diced
  • 1/2 English cucumber, finely diced
  • 1/4 small red onion, very finely diced
  • 2 tablespoons fresh basil or mint, finely chopped
  • 2 tablespoons honey, plus more for drizzling
  • Pinch of salt
  • Freshly ground black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Arrange the baguette slices in a single layer on a baking sheet. Lightly brush both sides of each slice with olive oil.
  2. Bake for 8-10 minutes, or until the bread is golden brown and lightly crisp. Remove from the oven and let cool slightly.
  3. In a medium bowl, gently combine the diced mango, cucumber, red onion, and chopped fresh basil or mint. Season with a pinch of salt and freshly ground black pepper.
  4. Spread a generous layer of softened goat cheese onto each toasted baguette slice.
  5. Spoon the mango and cucumber mixture evenly over the goat cheese on each bruschetta.
  6. Drizzle each bruschetta with honey just before serving.

Notes

For best results, use a ripe mango that is still firm enough to dice cleanly.

Dice the cucumber and red onion very finely to ensure a balanced bite with the mango.

If preparing ahead, keep the goat cheese and mango mixture separate until just before assembly.

Serve the bruschetta immediately after drizzling with honey to maintain optimal crispness of the bread.

A squeeze of lime juice can be added to the mango mixture for an extra bright note.
