  • 2 tablespoons mayonnaise
  • 1 teaspoon chipotle in adobo sauce, minced (adjust to desired spice level)
  • 1/2 teaspoon lime juice
  • 1 tablespoon chopped green onions, for garnish

Instructions

  1. **Prepare the Chipotle Sauce:** In a small bowl, combine the mayonnaise, minced chipotle in adobo sauce, and lime juice. Stir until well combined. Season with a pinch of salt if desired. Set aside.
  2. **Cook the Sausage:** Heat 1 teaspoon of butter or olive oil in a non-stick skillet over medium heat. Add the chicken or turkey sausage patties and cook according to package directions until heated through and lightly browned, about 2-3 minutes per side. Remove from skillet and set aside.
  3. **Cook the Eggs:** In a medium bowl, whisk the eggs with milk or cream, salt, and pepper until well combined. Heat 1 tablespoon of butter or olive oil in the same skillet over medium-low heat. Pour half of the egg mixture into the skillet, tilting to form a thin, round patty. Cook for 2-3 minutes until set, then carefully flip and cook for another 1 minute. Remove and repeat with the remaining egg mixture to make a second patty.
  4. **Toast the Bread:** While the eggs are cooking, toast the brioche bread or English muffins until golden brown. You can use a toaster, a pan with a little butter, or a toaster oven.
  5. **Assemble the Sandwiches:** Place one slice of toasted bread on a plate. Top with an egg patty, then a sausage patty. Drizzle generously with the prepared chipotle sauce. Place another slice of toasted bread on top. Repeat the layering if making a double-decker stack as shown, or serve as two individual sandwiches.
