  • 4 medium flour tortillas
  • 1 can (15 ounces) cannellini beans, rinsed and drained
  • 1/2 cup shredded Monterey Jack or cheddar cheese
  • 1/4 cup salsa
  • 1 tablespoon olive oil, plus more for brushing
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • For serving:
  • 1/4 cup diced fresh tomatoes
  • 2 tablespoons chopped fresh cilantro or parsley
  • 2 tablespoons plain Greek yogurt or sour cream

Instructions

  1. In a medium bowl, combine the rinsed and drained white beans, 1 tablespoon olive oil, salsa, ground cumin, chili powder, garlic powder, salt, and pepper. Mash about half of the beans with a fork or potato masher to create a slightly creamy texture while leaving some whole for substance.
  2. Lay two tortillas flat. On one half of each tortilla, spread an even layer of the white bean mixture, leaving a small border. Sprinkle half of the shredded cheese over the bean mixture.
  3. Fold the empty half of each tortilla over the filling to create a half-moon shape. Lightly brush both sides of the folded quesadillas with a small amount of olive oil.
  4. Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  5. Carefully place the quesadillas in the air fryer basket in a single layer, ensuring they are not overcrowded. You may need to cook them in batches.
  6. Air fry for 6-10 minutes, flipping halfway through, until the tortillas are golden brown and crispy, and the cheese is melted and bubbly.
  7. Remove the cooked quesadillas from the air fryer and repeat with any remaining quesadillas.
  8. Serve immediately, garnished with diced fresh tomatoes, chopped cilantro or parsley, and a drizzle of Greek yogurt or sour cream.

Notes

Do not overfill the tortillas to prevent spillage and ensure even cooking.

For extra crispiness, ensure the tortillas are lightly brushed with oil before air frying.

Adjust the spice level of the bean mixture to your preference by adding more chili powder or a pinch of cayenne pepper.

These quesadillas are best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated in the air fryer for a few minutes.
