Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 cup buttermilk (or homemade substitute: 1 cup milk + 1 tablespoon vinegar)
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted
  • ½ cup corn kernels (optional, fresh or frozen)
  • 3 tablespoons honey

For the Honey Butter Glaze:

  • 4 tablespoons unsalted butter, softened
  • 3 tablespoons honey

Instructions

  1. Preheat the oven to 180°C (350°F) and lightly grease a mini muffin pan or line it with paper cups.
  2. Mix the dry ingredients by combining cornmeal, flour, baking powder, baking soda, salt, and sugar in a large bowl. Whisk well to distribute the ingredients evenly.
  3. Prepare the wet mixture in a separate bowl by whisking together the buttermilk, eggs, and melted butter until smooth.
  4. Combine wet and dry ingredients by slowly adding the wet mixture into the dry ingredients. Stir gently until just combined. Do not overmix, as this can make the poppers dense.
  5. Fold in corn kernels if using. They add texture and sweetness.
  6. Scoop the batter into the prepared mini muffin pan, filling each cavity about three-quarters full.
  7. Bake the poppers for 12 to 15 minutes, or until a toothpick inserted in the center comes out clean.
  8. Prepare the honey butter glaze while the poppers bake. Mix the softened butter with honey until smooth and creamy.
  9. Brush the warm poppers with the honey butter glaze immediately after removing them from the oven. This helps the glaze soak into the crust and adds a glossy finish.
  10. Cool slightly and serve. These poppers are best enjoyed warm, but they can also be stored and reheated when needed.

Notes

To make them spicier, add finely diced jalapeños or a pinch of cayenne pepper to the batter.

For a sweeter variation, increase the honey in the glaze or serve with extra honey butter on the side.

If making ahead, store in an airtight container and reheat in the oven to restore freshness.

These poppers can be frozen and reheated later for quick snacks or party servings.
