Description

This elegant dish features tender chicken breasts expertly stuffed with a harmonious blend of sweet, crisp apple pieces and creamy, melted Brie cheese. The chicken is pan-seared to achieve a golden-brown, flavorful crust, then finished in the oven until perfectly cooked through. It is served in a light, savory pan sauce, creating a balanced and sophisticated meal with delightful contrasts in flavor and texture.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 68 oz each)
  • 1 small apple (such as Honeycrisp or Gala), cored and diced
  • 4 oz Brie cheese, rind removed, cut into 1/2-inch cubes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1/2 cup chicken broth
  • 1 tablespoon fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the chicken breasts: Using a sharp knife, carefully cut a deep pocket into the thickest side of each chicken breast, being careful not to cut all the way through.
  3. In a small bowl, gently combine the diced apple and Brie cheese cubes.
  4. Evenly stuff the apple and Brie mixture into the pockets of each chicken breast. If needed, secure the opening with a toothpick.
  5. Season the outside of the stuffed chicken breasts with salt, black pepper, garlic powder, and dried thyme.
  6. Heat olive oil in an oven-safe skillet (cast iron or stainless steel recommended) over medium-high heat.
  7. Once the oil is shimmering, carefully place the stuffed chicken breasts in the skillet. Sear for 3-4 minutes per side, until golden brown.
  8. Pour the chicken broth into the skillet around the chicken.
  9. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  10. Remove the skillet from the oven. Let the chicken rest for 5 minutes before serving.
  11. Drizzle with the pan sauce from the skillet and garnish with fresh chopped parsley.

Notes

Choose a firm, sweet-tart apple variety that holds its shape well during cooking.

Ensure the Brie rind is fully removed for a smoother, creamier melt.

Use a meat thermometer to ensure the chicken is cooked to a safe internal temperature.

Resting the chicken after cooking allows the juices to redistribute, resulting in a more tender and flavorful dish.

For extra flavor, add a pinch of dried sage to the seasoning blend.
