Ingredients
- 2 boneless, skinless chicken breasts (about 6–8 oz each)
- 1 small apple (such as Honeycrisp or Gala), cored and diced
- 4 oz Brie cheese, rind removed, cut into 1/2-inch cubes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- 1/2 cup chicken broth
- 1 tablespoon fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Prepare the chicken breasts: Using a sharp knife, carefully cut a deep pocket into the thickest side of each chicken breast, being careful not to cut all the way through.
- In a small bowl, gently combine the diced apple and Brie cheese cubes.
- Evenly stuff the apple and Brie mixture into the pockets of each chicken breast. If needed, secure the opening with a toothpick.
- Season the outside of the stuffed chicken breasts with salt, black pepper, garlic powder, and dried thyme.
- Heat olive oil in an oven-safe skillet (cast iron or stainless steel recommended) over medium-high heat.
- Once the oil is shimmering, carefully place the stuffed chicken breasts in the skillet. Sear for 3-4 minutes per side, until golden brown.
- Pour the chicken broth into the skillet around the chicken.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
- Remove the skillet from the oven. Let the chicken rest for 5 minutes before serving.
- Drizzle with the pan sauce from the skillet and garnish with fresh chopped parsley.
