These Greek-style lemon potatoes offer a vibrant and aromatic side dish.   • 2 pounds baby potatoes or small Yukon Gold potatoes, scrubbed
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup vegetable broth or water
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. If using larger potatoes, cut them into 1-inch pieces. For baby potatoes, leave them whole or halve them if preferred.
  3. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, and red pepper flakes (if using).
  4. Add the prepared potatoes to the bowl and toss until they are evenly coated with the lemon-garlic mixture.
  5. Spread the potatoes in a single layer on a large baking sheet or in a shallow roasting pan. Pour the vegetable broth or water around the potatoes.
  6. Roast for 30-40 minutes, stirring halfway through, until the potatoes are tender when pierced with a fork and lightly golden brown. The liquid should mostly evaporate, leaving a flavorful glaze.
  7. Remove from the oven, transfer to a serving dish, and garnish with fresh chopped parsley before serving.

Notes

For best results, use waxy potatoes like baby potatoes, Yukon Gold, or red potatoes, as they hold their shape well.

Ensure the potatoes are spread in a single layer on the baking sheet to promote even roasting and browning.

Adjust the amount of garlic and lemon juice to suit your personal preference.

A squeeze of fresh lemon juice just before serving can brighten the flavors further.

These potatoes are excellent served alongside roasted chicken, fish, or grilled vegetables.
