Description

  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon granulated sugar
  • 1 tablespoon balsamic vinegar (optional, for depth)
  • 4 slices sourdough or brioche bread
  • 1 cup whole milk ricotta cheese
  • 2 tablespoons honey, plus more for drizzling
  • 1/2 teaspoon vanilla extract
  • Pinch of flaky sea salt, for garnish
  • 2 tablespoons fresh mint leaves, finely chopped, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the sliced strawberries with granulated sugar and balsamic vinegar (if using). Toss gently to coat.
  3. Spread the strawberries in a single layer on the prepared baking sheet. Roast for 10-15 minutes, or until softened and slightly caramelized, stirring halfway through. Remove from oven and let cool slightly.
  4. While the strawberries roast, prepare the whipped ricotta. In a medium bowl, combine the ricotta cheese, 2 tablespoons of honey, and vanilla extract. Using a whisk or an electric mixer, whip until light and fluffy, about 2-3 minutes.
  5. Toast the bread slices until golden brown and crisp. This can be done in a toaster, a pan with a little olive oil, or under the broiler.
  6. To assemble, spread a generous amount of whipped ricotta onto each slice of toasted bread.
  7. Spoon the roasted strawberries over the ricotta.
  8. Drizzle with additional honey, if desired, and sprinkle with flaky sea salt and chopped fresh mint before serving.

Notes

For an extra creamy ricotta, ensure it is well-drained before whipping.

Consider adding a tiny pinch of black pepper to the strawberries before roasting for a subtle warmth.
