Description

These Mediterranean Spinach and Feta Crisps offer a delightful combination of textures and flavors. Golden, crisp pastry triangles serve as the base, topped with a vibrant mixture of sautéed spinach and crumbled feta cheese. The savory earthiness of the spinach is beautifully complemented by the tangy, salty notes of the feta, all brought together with a hint of garlic and olive oil. Baked until perfectly golden, these crisps present a light yet satisfying appetizer or snack.

Ingredients

Scale
  • 12 wonton wrappers
  • 1 tablespoon olive oil, plus more for brushing
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach, roughly chopped
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the chopped spinach to the skillet. Cook, stirring occasionally, until the spinach wilts completely, about 3-5 minutes. Remove from heat and let cool slightly.
  4. Once cooled, squeeze out any excess liquid from the spinach using a clean kitchen towel or paper towels. This step is crucial to prevent soggy crisps.
  5. In a small bowl, combine the squeezed spinach, crumbled feta cheese, lemon juice, and oregano. Season with salt and pepper to taste.
  6. Cut each wonton wrapper diagonally into two triangles. Arrange the triangles in a single layer on the prepared baking sheet.
  7. Lightly brush the wonton triangles with olive oil.
  8. Spoon a small amount of the spinach and feta mixture onto the center of each wonton triangle.
  9. Bake for 8-12 minutes, or until the wonton wrappers are golden brown and crispy, and the feta is slightly warmed.
  10. Serve immediately.

Notes

Ensure all excess moisture is removed from the spinach to maintain crispness.

For an extra layer of flavor, add a pinch of red pepper flakes to the spinach mixture.

These crisps are best enjoyed fresh, but leftovers can be stored in an airtight container at room temperature for up to 1 day.

Consider a sprinkle of fresh dill or parsley after baking for a fresh aromatic finish.
