Description
This classic egg fried rice features fluffy grains of rice stir-fried with tender scrambled eggs, vibrant green peas, and finely diced carrots. Each spoonful offers a savory blend of umami-rich soy sauce and aromatic garlic, complemented by the fresh, mild bite of green onions. The dish is prepared quickly over high heat, ensuring a delightful texture and balanced flavor profile.
Ingredients
- 2 cups cold, day-old cooked white rice
- 2 large eggs
- 1 tablespoon vegetable oil (plus more for eggs)
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1/2 teaspoon sesame oil (optional)
- Salt to taste
- Black pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- In a small bowl, whisk the eggs with a pinch of salt and pepper. Heat a small amount of vegetable oil in a large skillet or wok over medium-high heat. Pour in the eggs and scramble until cooked through but still tender. Remove the eggs from the skillet and set aside.
- Add 1 tablespoon of vegetable oil to the same skillet or wok over medium-high heat. Add the diced carrots and cook for 2-3 minutes until slightly tender.
- Add the frozen peas and minced garlic to the skillet. Stir-fry for another 1-2 minutes until the peas are heated through and the garlic is fragrant.
- Add the cold, day-old cooked rice to the skillet. Break up any clumps with a spatula. Stir-fry for 3-5 minutes, allowing the rice to heat through and develop a slight crispness.
- Pour the soy sauce and sesame oil (if using) over the rice. Stir well to combine, ensuring the rice is evenly coated.
- Return the scrambled eggs to the skillet with the rice and vegetables. Toss gently to incorporate.
- Taste and adjust seasoning with additional salt or pepper if needed.
- Serve immediately, garnished with sliced green onions.
Notes
Using cold, day-old rice is essential for a non-sticky, fluffy fried rice texture.
Cook over high heat to achieve a slight char and distinct fried rice flavor.
Do not overcrowd the pan; cook in batches if preparing a larger quantity.
For added flavor, a pinch of white pepper can be added with the soy sauce.
