  • 2 cups cold, day-old cooked white rice
  • 2 large eggs
  • 1 tablespoon vegetable oil (plus more for eggs)
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sesame oil (optional)
  • Salt to taste
  • Black pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a small bowl, whisk the eggs with a pinch of salt and pepper. Heat a small amount of vegetable oil in a large skillet or wok over medium-high heat. Pour in the eggs and scramble until cooked through but still tender. Remove the eggs from the skillet and set aside.
  2. Add 1 tablespoon of vegetable oil to the same skillet or wok over medium-high heat. Add the diced carrots and cook for 2-3 minutes until slightly tender.
  3. Add the frozen peas and minced garlic to the skillet. Stir-fry for another 1-2 minutes until the peas are heated through and the garlic is fragrant.
  4. Add the cold, day-old cooked rice to the skillet. Break up any clumps with a spatula. Stir-fry for 3-5 minutes, allowing the rice to heat through and develop a slight crispness.
  5. Pour the soy sauce and sesame oil (if using) over the rice. Stir well to combine, ensuring the rice is evenly coated.
  6. Return the scrambled eggs to the skillet with the rice and vegetables. Toss gently to incorporate.
  7. Taste and adjust seasoning with additional salt or pepper if needed.
  8. Serve immediately, garnished with sliced green onions.

Notes

Using cold, day-old rice is essential for a non-sticky, fluffy fried rice texture.

Cook over high heat to achieve a slight char and distinct fried rice flavor.

Do not overcrowd the pan; cook in batches if preparing a larger quantity.

For added flavor, a pinch of white pepper can be added with the soy sauce.
