Ingredients
- 2 cups plain full-fat Greek yogurt
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest, plus more for garnish
- 2–3 tablespoons honey or maple syrup, to taste
- 1 teaspoon vanilla extract (optional)
- 1/2 cup graham cracker crumbs
Instructions
- Line a baking sheet (approximately 9×13 inches) with parchment paper, leaving an overhang on the sides for easy lifting.
- In a medium bowl, combine the Greek yogurt, fresh lime juice, 1 tablespoon of lime zest, honey or maple syrup, and vanilla extract (if using). Stir until well combined and smooth. Taste and adjust sweetness if desired.
- Pour the yogurt mixture onto the prepared baking sheet and spread it evenly into a thin layer, about 1/4 to 1/2 inch thick.
- Evenly sprinkle the graham cracker crumbs over the yogurt layer. Add additional lime zest for extra flavor and visual appeal.
- Place the baking sheet in the freezer and freeze for at least 2-4 hours, or until the bark is completely firm.
- Once frozen, lift the parchment paper from the baking sheet and break the bark into irregular pieces.
- Serve immediately or store in an airtight container in the freezer.
