Description

This Key Lime Pie Yogurt Bark offers a delightful balance of tangy lime and creamy yogurt, creating a refreshing frozen treat. The smooth, firm yogurt base is brightened by fresh lime juice and zest, complemented by the subtle sweetness and crumbly texture of graham cracker pieces. It is a simple, no-bake dessert that sets beautifully in the freezer, providing a crisp and cool bite.

Ingredients

Scale
  • 2 cups plain full-fat Greek yogurt
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest, plus more for garnish
  • 23 tablespoons honey or maple syrup, to taste
  • 1 teaspoon vanilla extract (optional)
  • 1/2 cup graham cracker crumbs

Instructions

  1. Line a baking sheet (approximately 9×13 inches) with parchment paper, leaving an overhang on the sides for easy lifting.
  2. In a medium bowl, combine the Greek yogurt, fresh lime juice, 1 tablespoon of lime zest, honey or maple syrup, and vanilla extract (if using). Stir until well combined and smooth. Taste and adjust sweetness if desired.
  3. Pour the yogurt mixture onto the prepared baking sheet and spread it evenly into a thin layer, about 1/4 to 1/2 inch thick.
  4. Evenly sprinkle the graham cracker crumbs over the yogurt layer. Add additional lime zest for extra flavor and visual appeal.
  5. Place the baking sheet in the freezer and freeze for at least 2-4 hours, or until the bark is completely firm.
  6. Once frozen, lift the parchment paper from the baking sheet and break the bark into irregular pieces.
  7. Serve immediately or store in an airtight container in the freezer.

Notes

For the best creamy texture, use full-fat Greek yogurt.

Adjust the amount of sweetener to suit your preference for tartness.

Store the yogurt bark in an airtight container in the freezer for up to 2 weeks.

Experiment with other citrus fruits like lemon or orange for different flavor variations.
