Description

These breakfast sandwiches feature toasted English muffins layered with fluffy scrambled eggs, savory breakfast sausage patties, and a creamy, smoky chipotle sauce. Each bite offers a harmonious blend of textures, from the crisp exterior of the muffin to the tender egg and firm sausage, all brought together by the subtly spicy and rich sauce. A sprinkle of fresh scallions adds a bright, herbaceous finish.

Ingredients

Scale
  • 4 English muffins, split
  • 4 large eggs
  • 2 tablespoons milk or cream
  • 4 pre-cooked non-pork breakfast sausage patties (e.g., turkey or chicken)
  • 2 tablespoons unsalted butter or olive oil, divided
  • Salt and freshly ground black pepper to taste
  • For the Chipotle Sauce:
  • 1/2 cup mayonnaise
  • 12 tablespoons adobo sauce from canned chipotles in adobo (adjust to desired spice)
  • 1 teaspoon lime juice
  • For Garnish:
  • 2 tablespoons chopped fresh scallions

Instructions

  1. **Prepare the Chipotle Sauce:** In a small bowl, combine the mayonnaise, adobo sauce, and lime juice. Whisk until smooth. Taste and adjust adobo sauce for desired spice level. Set aside.
  2. **Cook the Sausage:** Heat 1 tablespoon of butter or oil in a large skillet over medium heat. Add the non-pork breakfast sausage patties and cook according to package directions until heated through and lightly browned, about 3-5 minutes per side. Remove from skillet and set aside.
  3. **Cook the Eggs:** In a medium bowl, whisk the eggs with milk or cream, salt, and pepper until well combined. Add the remaining 1 tablespoon of butter or oil to the same skillet (or a clean one) over medium-low heat. Pour in the egg mixture and cook, stirring gently, until the eggs are set and fluffy. You can also cook them as individual egg patties using a ring mold if preferred.
  4. **Toast the English Muffins:** While the eggs are cooking, toast the split English muffins in a toaster or on a dry skillet until golden brown and warm.
  5. **Assemble the Sandwiches:** Spread a generous amount of chipotle sauce on the bottom half of each toasted English muffin. Layer with a cooked sausage patty, a portion of the scrambled eggs, and then another dollop of chipotle sauce. Top with the other half of the English muffin.
  6. **Garnish and Serve:** Garnish each sandwich with chopped fresh scallions and serve immediately.

Notes

Adjust the amount of adobo sauce in the chipotle mayonnaise to control the spice level.

For a quicker preparation, use pre-cooked egg patties or cook eggs in a microwave.

Consider adding a slice of cheese to the sandwich while the eggs are still warm for a melted finish.

These sandwiches are best enjoyed fresh, but components can be prepped ahead and assembled just before serving.
