Ingredients
- 1 cup freshly squeezed lemon juice (from 4–5 lemons)
- 1 (13.5 ounce) can full-fat coconut milk, chilled
- 1/2 cup granulated sugar, or to taste
- 1 cup cold water
- 4 cups ice cubes
- For garnish: shredded coconut, lemon slices, fresh mint sprigs
Instructions
- Combine the lemon juice, chilled coconut milk, granulated sugar, and cold water in a high-speed blender.
- Add the ice cubes to the blender.
- Blend on high speed until the mixture is completely smooth and has a slushy, creamy consistency. If needed, stop and scrape down the sides of the blender to ensure all ingredients are incorporated.
- If desired, moisten the rims of your serving glasses with a lemon wedge and dip them into shredded coconut for a decorative edge.
