Ingredients
- 1 sheet frozen puff pastry, thawed
- 4 oz fresh goat cheese, crumbled
- 2 tablespoons honey
- 1 tablespoon unsalted butter, melted
- 1 large egg, beaten (for egg wash, optional)
- Fresh thyme sprigs, for garnish
- Flaky sea salt, for sprinkling (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Unroll the thawed puff pastry sheet onto a lightly floured surface. Using a 2-inch round cookie cutter or a knife, cut out 12-16 circles.
- Arrange the pastry circles on the prepared baking sheet. Brush the tops of the pastry circles lightly with melted butter or an egg wash for a golden finish.
- Bake for 12-15 minutes, or until the pastry is puffed and golden brown.
- Remove the pastry from the oven and let cool slightly on the baking sheet.
- Once slightly cooled, top each pastry bite with a generous crumble of goat cheese.
- Drizzle each bite with honey.
- Garnish with a small sprig of fresh thyme and a sprinkle of flaky sea salt, if desired. Serve warm or at room temperature.
Notes
Ensure puff pastry is fully thawed but still cold for best results when cutting.
For extra crispness, you can lightly prick the center of the pastry circles with a fork before baking.
Experiment with different types of honey, such as wildflower or lavender, for varied flavor notes.
These bites are best served fresh, but can be assembled ahead of time and baked just before serving.
