Ingredients
- 1/2 cup unsweetened coconut milk
- 1/4 cup full-fat Greek yogurt
- 1/4 cup fresh key lime juice
- 1 tablespoon key lime zest
- 2 tablespoons granulated sugar or maple syrup (adjust to taste)
- 1/2 teaspoon vanilla extract
- 1 cup ice cubes
- 2 tablespoons crushed graham crackers, for rim
- Whipped cream, for topping
- 1 tablespoon toasted coconut flakes, for topping
- 1 key lime slice, for garnish
Instructions
- Prepare the glass: Pour the crushed graham crackers onto a small plate. Lightly moisten the rim of a tall glass with a lime wedge or a little water, then dip the rim into the graham cracker crumbs, rotating to coat evenly. Set aside.
- Combine smoothie ingredients: In a high-speed blender, combine the coconut milk, Greek yogurt, key lime juice, key lime zest, sugar or maple syrup, vanilla extract, and ice cubes.
- Blend until smooth: Blend on high speed until the mixture is completely smooth and creamy, with no ice chunks remaining. If the smoothie is too thick, add a splash more coconut milk; if too thin, add a few more ice cubes.
- Pour and garnish: Carefully pour the smoothie into the prepared glass. Top generously with whipped cream, sprinkle with toasted coconut flakes, and garnish with a fresh key lime slice. Serve immediately.
Notes
For an extra thick and creamy smoothie, use frozen coconut milk cubes instead of regular ice.
Adjust the sweetness and tartness to your preference by adding more sugar or lime juice.
To toast coconut flakes, spread them in a single layer on a baking sheet and bake at 300°F (150°C) for 5-7 minutes, or until golden brown, stirring once.
For a richer, more “pie-like” texture, add 1-2 tablespoons of softened cream cheese to the blender.
