  • 1/2 cup rolled oats
  • 1 cup water or unsweetened milk (dairy or non-dairy)
  • Pinch of salt
  • 1/4 cup shredded Parmesan cheese
  • 1/2 ripe avocado, sliced
  • 1 large egg
  • 1 teaspoon olive oil or butter
  • Fresh parsley or cilantro, chopped (for garnish)
  • Freshly ground black pepper, to taste

Instructions

  1. Combine rolled oats, water (or milk), and a pinch of salt in a small saucepan. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, for 5-7 minutes, or until oats are cooked and liquid is absorbed.
  2. While the oats are cooking, heat olive oil or butter in a non-stick skillet over medium heat. Crack the egg into the skillet and fry until the whites are set and the yolk is still runny, about 2-3 minutes. Season with a pinch of salt and pepper.
  3. Remove the cooked oatmeal from the heat and stir in the shredded cheese until melted and well combined.
  4. Transfer the cheesy oatmeal to a serving bowl. Arrange the sliced avocado and fried egg on top.
  5. Garnish with fresh parsley or cilantro and a generous grind of black pepper. Serve immediately.
