  • 2 slices artisan bread, such as sourdough or brioche
  • 2 tablespoons unsalted butter, softened
  • 1/2 cup shredded white cheddar cheese
  • 2 tablespoons peach preserves or finely diced fresh peach
  • 1 teaspoon honey
  • Pinch of sea salt
  • Fresh thyme sprigs for garnish (optional)

Instructions

  1. Spread 1 tablespoon of softened butter evenly on one side of each slice of bread.
  2. Place one slice of bread, butter-side down, into a cold non-stick skillet.
  3. Layer half of the white cheddar cheese onto the bread in the skillet.
  4. Evenly spread the peach preserves (or diced fresh peach) over the cheese, then drizzle with honey and a pinch of sea salt.
  5. Top with the remaining white cheddar cheese.
  6. Place the second slice of bread on top, butter-side up.
  7. Turn the heat to medium-low and cook for 4-6 minutes per side, or until the bread is golden brown and the cheese is thoroughly melted and gooey. Press gently with a spatula occasionally to ensure even contact with the pan.
  8. Once cooked, carefully remove the sandwich from the skillet. Let it rest for a minute before slicing in half.
  9. Garnish with fresh thyme sprigs, if desired, and serve immediately.
