Description

Ingredients

  • For the Salmon Bites:
  • * 1 lb skinless salmon fillet, cut into 1-inch cubes
  • * 1/2 cup all-purpose flour
  • * 2 large eggs, beaten
  • * 1 cup panko breadcrumbs
  • * 1 tsp paprika
  • * 1 tsp garlic powder
  • * 1/2 tsp onion powder
  • * 1/2 tsp salt
  • * 1/4 tsp black pepper
  • * Olive oil spray
  • For the Bang Bang Sauce:
  • * 1/2 cup mayonnaise
  • * 1/4 cup sweet chili sauce
  • * 1-2 tsp sriracha, or to taste
  • * 1 tsp lime juice
  • For Garnish:
  • * 1 tbsp fresh parsley, finely chopped

Instructions

  1. Pat the salmon cubes completely dry with a paper towel. This helps the coating adhere properly.
  2. Set up a dredging station with three shallow dishes. In the first, place the flour. In the second, whisk the eggs. In the third, combine the panko breadcrumbs, paprika, garlic powder, onion powder, salt, and pepper.
  3. Working one at a time, coat each salmon cube first in the flour, shaking off any excess. Then, dip it into the beaten egg, allowing the excess to drip off. Finally, press it firmly into the panko mixture, ensuring it is fully coated on all sides.
  4. Preheat your air fryer to 400°F (200°C).
  5. Arrange the coated salmon bites in a single layer in the air fryer basket, making sure not to overcrowd them. You may need to cook in batches. Lightly spray the tops with olive oil spray.
  6. Air fry for 8-10 minutes, flipping halfway through, or until the salmon is cooked through and the coating is golden brown and crispy.
  7. While the salmon is cooking, prepare the bang bang sauce. In a small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha. Stir in the lime juice.
  8. Once cooked, transfer the crispy salmon bites to a serving plate. Drizzle with the bang bang sauce and garnish with fresh chopped parsley before serving.

Notes

Ensure salmon cubes are cut to a uniform size for even cooking.
